A waffle is a type of cake similar to a pancake. They are generally baked between to hot plates. Cooking both sides at the same time. This gives them an all around crunchy exterior and a uniform color. They are the most widely eaten breakfast food in the world. The fan favorite however is the Belgian Waffle. It may be because of its deep pockets that trap fruits and syrup so you get a lot in one bite.
Belgian waffles are a hit with almost everyone. The best Belgian waffles are made with yeast. The yeast makes the Belgian waffles soft, fluffy, and chewy. You could also use cake flour or baking powder but you will get the best result with yeast. If you use yeast then eat them when they are done. You can substitute the baking powder for yeast in this recipe.
1 cup banana, mashed
3 eggs, lightly beaten
1 cup vanilla yogurt, lowfat
21/2 cups unbleached flour
¾ cup whole milk
2 tablespoons granulated sugar
½ teaspoon salt
6 tablespoons vegetable oil
½ cup walnuts, chopped
This is the way to prepare the batter. Starting with the dry ingredients. Mix them together in one bowl in a separate bowl mix together the wet ingredients. After you have done this you can gently add the dry ingredients into the wet, all the while using the hand mixture to blend the two. What you want is a batter of good consistency and slightly thicker than pancake batter.
Spoon about ½ cup of batter onto the center plate in the waffle maker. Close the lid and let bake until the timer goes off.
You can dress them up as you see fit. One great way is to put slices of banana on the top along with a few sliced strawberries. Top with powdered sugar and syrup. Freeze the leftovers only if you used the baking powder. The yeast variety does not keep as well. Children love waffles anytime day or night. You can cut them into strips and sprinkle them with powdered sugar for a great snack anytime.
